Pineapple Weed Jelly

Pineappleweed, wild chamomile, disc mayweed, or rayless mayweed, whatever you like to call it is a common herb of fields, gardens, and roadsides and the flowers exude a beautifully fruity pineapple aroma when crushed.


Pineappleweed Jelly

  • 1 cup Pineappleweed buds

  • 2 cups boiling water

  • 4 cups sugar

  • 1 lemon (1/4 cup)

  • 1 sachet Pectin (100g)

  1. Pour boiling water over the Pineappleweed buds and let steep for 15 minutes

  2. Strain tea into saucepan and stir in 1 1/2 cups water, the sugar and lemon juice then boil, stirring constantly for 1-2 minutes.

  3. Pour in pectin and return to a boil for another 1 minute stirring constantly.

  4. Remove from heat and skim off foam. Pour into jars and enjoy in cakes and biscuits or just on scones!
